I exchanged an equal amount of it for the honey. I felt like I could have used a little bit more, though instead of using a cup and a half of canned chickpeas I used 2 cups fresh. I probably should have just used 1.5 cups.

I know of sun butter because a nutritionist had me stay away from peanuts for a while. All I ever knew growing up was peanut butter. I learned of other nut butters as they came out, but I was always shocked with how expensive they were. A coworker of mine with a severe peanut allergy taught me about sun butter. I like you that you also substituted oat milk for coconut milk. I’m okay with coconut milk, but taste-wise I would rather have something else. I also don’t want all of the fat and calories. If I make it I might try substituting in soy milk.

It never would have occurred to me to try sunflower butter in a curry. Thanks for letting us know it works well!

It should be competitively priced with peanut butter, as both peanuts and sunflower seeds are popular oil crops.

You might want to go one better and find vegan meal replacement powders so you get more complete nutrition.
