My guess is they somehow evolved to survive longer. Im betting its some kind of hibernation trick; if theres no living humans around they go dormant for a long period of time and wake up once disturbed by human activity. Would tie in with that really emaciated zombie that seems to rise from a laying position in the field in the trailer.
