By “draining it” I take that to mean cutting open the package and letting the water drain out. It is pricey, but I like using the TofuXPress tofu press. Very easy, I get a very meaty texture. I haven’t heard about salt water. I have heard about boiling tofu, but I haven’t tried it. I have done freezing a few times. It is less convenient than a tofu press. I think the texture would be great for some recipes, but not good overall.
