I think Doakes is great, his interactions are hilarious while also bringing in some tension. Doakes trusts his instincts, and as a detective his instincts are telling him something is off about Dexter. And his instincts are 100% right. Doakes is exactly the kind of person a serial killer in hiding wants to avoid ever being around.
