I have a friend I pay to come take care of my dog, gardens, kitty and hens when I leave town. She lived with me for a while so she knows the property critters well.

Self-respect and discipline are like swords to be used, they require honing, upkeep and training move with efficiency, stay sharp and be successful with. I’ve honed my willpower to an immutable force. If I decide to do something, or quit something I always follow through. It’s taken many years to get here but I now can count on my capability to commit and follow through, every time. In many ways it’s a double edged sword, both a blessing and a curse..but that’s another tale. I accept when I decide it’s not the time to do the chore or task during the window I had originally planned, that’s fine and it’s our privilege / prerogative as we answer only to ourselves. If I decide to blow something off I also declare to myself when exactly it’s a better time to do it. Then I do it.

Same, my dog needs to be able to check on things and come back to snuggle at her discretion. Also in the winter I get to heat my home with a wood stove in the living room, my bedroom door is less than 10ft from the stove and nothing beats wood heat for comfort and ambiance in the winter. If I have a house guest who’s not sleeping with me, the occasional friend on the couch, I close my bedroom door otherwise it’s always open.

Yes, it’s made with filo dough not flour or pancake mix. The three key ingredients are filo, feta and spinach. The recipe I make is a family recipe passed from my grandmother to my mother to me. I take a lot of pride in our heritage and recipes and seeing this post threw me off. OP’s recipe is a spinach pie at best, to call it spanikopita is an insult.

Im Greek, what you have there and the recipe u suggest is not spanikopita. Fuck that.

Hey OP if you’re ever coming through Southern Oregon I’d like make and share some authentic spanikopita with you. I’m very serious. To think this recipe is all you know of it is a shame. I’d like to fix that and I’d even consider sharing a proper recipe.
